To assist our clients, we offer these portioning tips:
For
pre-dinner appetizers, you will need 6 pieces per person per hour
For
late, post-meal hors doeuvres allow for 5 pieces per person
per hour
Allow
10 to 12 pieces per person for a late afternoon/ early evening
drinks party (assuming that guests will be having a meal elsewhere
later on)
Allow
12 to 14 items per person for evening refreshments after a late
lunch party, wedding breakfast/reception.
For
an appetizer only party, allow 14 to 16 items per person.
